Garlic Mashed Cauliflower

Ingredients:
One large head of cauliflower, chopped into florets
Four cloves of garlic, minced
Two tablespoons butter
1/4 cup milk or heavy cream
Salt and pepper to taste
Chopped fresh chives for garnish (optional)
Directions:
In a large pot, bring water to a boil. Add the cauliflower florets and cook for about 10-15 minutes or until they are tender when pierced with a fork. While the cauliflower is cooking, heat the butter in a small pan over medium heat.
Add the minced garlic and sauté for 1-2 minutes, until fragrant. Be careful not to brown the garlic.
Drain the cooked cauliflower and transfer it to a food processor or a large mixing bowl. Add the sautéed garlic, butter, and milk (or heavy cream) to the cauliflower.
Using a food processor or an immersion blender, process the mixture until smooth and creamy. If using a mixing bowl, use a potato masher or fork to mash the cauliflower until smooth.
Season the mashed cauliflower with salt and pepper to taste. Adjust the amount of butter and milk to achieve your desired consistency.
Once the cauliflower is mashed to your liking, transfer it to a serving bowl. Garnish the mashed cauliflower with chopped fresh chives for added flavor and color if desired.
