Mixed Berry Coconut Sorbet

Ingredients:
3 cups mixed berries (such as strawberries, blueberries, raspberries, and blackberries), frozen
One can (14 ounces) of coconut milk, full of Fat
1/3 cup honey or maple syrup (adjust to taste)
One tablespoon of fresh lemon juice
One teaspoon of vanilla extract
Pinch of salt
Directions:
In a blender or food processor, combine the frozen mixed berries, coconut milk, honey or maple syrup, lemon juice, vanilla extract, and a pinch of salt. Blend until the mixture is smooth and creamy.
You may need to stop and scrape down the sides of the blender or food processor a few times to ensure even blending.
Taste the mixture and adjust the sweetness if needed by adding more honey or maple syrup.
Once the mixture is smooth and well combined, transfer it to a freezer-safe container. You can use a loaf pan or a shallow dish.
Cover the container with plastic wrap or a lid and place it in the freezer. Allow the sorbet to freeze for about 4-6 hours or until it’s firm.
Before serving, let the sorbet sit at room temperature for a few minutes to soften slightly, making it easier to scoop.
Scoop the mixed berry coconut sorbet into serving bowls or cones, and enjoy!
