Ingredients:

1/4 cup chia seeds

1 cup unsweetened almond milk (or any milk of your choice)

Two tablespoons of cocoa powder

2 tablespoons maple syrup or honey

1 teaspoon vanilla extract Pinch of salt

1/2 cup Greek yogurt (vanilla or plain)

1/4 cup granola

Fresh berries for topping

 

Directions:

In a bowl, combine the chia seeds, almond milk, cocoa powder, maple syrup or honey, vanilla extract, and a pinch of salt. Stir well to ensure the cocoa powder is fully mixed, and there are no clumps. Let the chia mixture sit for about 10-15 minutes, stirring every few minutes during the first 30 minutes.

This allows the chia seeds to absorb the liquid and form a pudding-like consistency. While the chia mixture is set, prepare the layers. In serving glasses or jars, add a layer of chia chocolate pudding.

Next, add a layer of Greek yogurt on top of the chia pudding layer. Sprinkle a layer of granola over the yogurt. Repeat the layers until the glasses are almost full, finishing with a layer of granola on top.

Garnish with fresh berries for a pop of color and extra flavor if desired. Refrigerate the parfaits for at least 1 hour before serving to allow the flavors to meld and the layers to set.
