Baked Dijon Salmon with Asparagus

Ingredients:
Four salmon fillets (about 6 oz each)
One bunch of asparagus, tough ends trimmed
Three tablespoons of Dijon mustard
Two tablespoons honey
Two cloves garlic, minced
One tablespoon of olive oil
One teaspoon of lemon juice
Salt and black pepper, to taste
Fresh dill or parsley for garnish
Directions:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it. Whisk together the Dijon mustard, honey, minced garlic, olive oil, lemon juice, salt, and black pepper in a small bowl.
This will be the marinade and sauce for the salmon. Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour half of the Dijon mustard marinade over the salmon fillets, ensuring they are evenly coated. Reserve the other half of the marinade for later.
Marinate the salmon in the refrigerator for 10-15 minutes while preparing the asparagus. Arrange the trimmed asparagus on one side of the prepared baking sheet. Drizzle olive oil over the asparagus and season with salt and pepper.
Toss to coat. Place the marinated salmon fillets on the other side of the baking sheet, leaving a little space between each fillet and the asparagus.
Bake in the preheated oven for about 15-20 minutes or until the salmon is cooked and flakes easily with a fork. The cooking time may vary based on the thickness of the salmon fillets. During the last 5 minutes of baking, brush the reserved Dijon mustard marinade over the salmon fillets. This will create a flavorful glaze.
Once the salmon is cooked, remove the baking sheet from the oven. Garnish the salmon with fresh dill or parsley for an extra pop of flavor and color.
Serve the Baked Dijon Salmon with the roasted asparagus on the side. You can pair this dish with your favorite grains, such as quinoa or rice, for a complete and satisfying meal.
