Italian Rice Balls

Ingredients:
400g cooked rice
25g breadcrumbs, plus an extra 200g for breading
2 tbsp flour, plus an extra 2 tbsp for breading
1 tbsp cornstarch, plus an extra 3 tbsp for breading
1 chopped bell pepper
1 chopped onion
2 tbsp olive oil
1 tsp red chilli flakes
5 chopped mozzarella cheese sticks
A little water for the breading
Salt and pepper for seasoning
Directions:
Place the cooked rice into a bowl and mash with a fork. Place to one side
Take a saucepan and add the oil, salting the onion and peppers until they’re both soft
Add the chilli flakes and a little salt and combine
Add the mixture to the mashed rice and combine
Add the 2 tbsp flour and 1 tbsp cornstarch, along with the 25g breadcrumbs and combine well
Use your hands to create balls with the mixture
Stuff a piece of the mozzarella inside the balls and form around it
Take a bowl and add the rest of the flour, corn starch and a little seasoning, with a small amount of water to create a thick batter
Take another bowl and add the rest of the breadcrumbs
Dip each rice ball into the batter and then the breadcrumbs
Preheat the air fryer to 220ºC
Cook for 6 minutes, before shaking and cooking for another 6 minutes
