Ingredients:

1.5 lbs (680g) boneless, skinless chicken breasts cut into 1-inch cubes

Two lemons, zested and juiced

Three tablespoons olive oil

Two cloves garlic, minced

One teaspoon of dried oregano

One teaspoon of dried thyme

One teaspoon of dried rosemary

Salt and pepper, to taste

Wooden skewers, soaked in water for 30 minutes

 

Directions:

In a bowl, combine the lemon zest, lemon juice, olive oil, minced garlic, dried oregano, dried thyme, dried rosemary, salt, and pepper.

Mix well to create the marinade. Add the chicken cubes to the marinade and toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, allowing the flavors to infuse. Preheat the grill to medium-high heat.

Thread the marinated chicken cubes onto the soaked wooden skewers, leaving a little space between each piece. Place the chicken skewers on the preheated grill. Cook for 6-8 minutes on each side or until the chicken is cooked through and has nice grill marks.

Make sure to baste the chicken with any leftover marinade while grilling. Once the chicken is fully cooked, remove the skewers from the grill and let them rest for a few minutes before serving.

Serve the Grilled Lemon Herb Chicken Skewers with your favorite side dishes, such as rice, grilled vegetables, or a fresh salad.
